Quick Lemon Pudding

INGREDIENTS

• 100gms sugar
• 100gms softened butter
• 100gms selfraising flour
• 2 eggs
• rind of 1 lemon
• 1 tsp vanilla
• 4 tbsps lemon curd
• cream to serve

METHOD

 Mix butter, sugar flour, eggs, rind and vanilla together till creamy. Spoon into baking dish. Bake till set. Heat lemon curd, pour over top of pudding and serve with cream.
