BUBBLE AND SQUEAK CAKES

Ingredients

500gms potatoes boiled and mashed
2 carrots boiled and finely chopped
125 gms cabbage finley shredded
2 B onions chopped small
3 tblsp parsley chopped
 flour for tossing and oil for frying. 4 eggs
8 oz bacon ends
seasoning

 

Directions

Add mashed carrots, light cooked cabbage onion and parsley to mashed potatoes. Form into cakes. Toss in flour and fry. Serve with a poached egg and bacon fried crisp on top.
